Turkey Taco Lettuce Wraps

One thing we have been enjoying about the 21 Day Fix is how easy they have made the eating plan. Gone are the days when we would count calories or weigh our food. Taking up so much time that we would eventually get burnt out and quit after a week or two, if we made it that long that is. When we make this dish we prefer to double the batch, this way we have lunches for the next few days, and left overs for one night if we're running late. Just scoop out your portion, heat it up, and viola!

Ingredients:

1 1/2 lbs. lean ground turkey breast

1 tsp. garlic powder or 2 cloves garlic

1 tsp. ground cumin

1/2 tsp. salt

1/2 tsp dried oregano

1 tsp. chili powder

1 tsp. paprika

1/2 medium onion, finely chopped

1/2 red and green bell pepper, finely chopped

3/4 cup water

1/2 cup tomato sauce

1(2 if doubling up) large lettuce leaf, washed, and dried (per serving)

1 medium tomato, chopped

(Makes 6 lettuce wraps)

Directions:

  1. Heat a large nonstick skillet over medium heat. Add the turkey and cook, stirring frequently until cooked through, about 5 minutes.

  2. Add the garlic powder, cumin, salt, chili powder, paprika, and oregano. Mix well.

  3. Add the onion and bell pepper. Cook for about 4 to 5 minutes or until onion is translucent.

  4. Add water and tomato sauce. Bring to boil. Reduce to a simmer and cook, covered, for about 10-12 minutes, or until sauce has reduced.

  5. Serve turkey mixture over lettuce leaves and desired toppings.

**One lettuce leaf(I suggest doubling up on the lettuce leaves for more support).
